Red Beans and Rice recipe (wanted)
Anybody have a good homemade recipe ? Thanks in advance....

I have found I can find a recipe of any dish simply by typing the name of it into search resulting in dozens to choose from.

After a ham dinner comes soup or a pot of beans. If beans, I like to have at least one mess with white rice. Rice on one side of the bowl, then fill the other with beans, make sure I have the beer, the Louisiana Hot Sauce and four or five green onions and get after it.
I just cook the beans with minimal spice... an onion, garlic, black pepper, cayenne, sage and salt. If no ham, then I cook beans with salt pork and will have some smoked venison sausage on top of my bowl of beans and rice.

By the way I am another who will vote for Zatarains for quick, easy and tasty on traditional Cajun dishes.

Thanks for the input guys...... I do have some recipes off the net but like a lot of cooks , want to try something different. Some of the best recipes i have collected over the years come from people that experiment with food and hopefully come up with something unique..... Thanks to all....

OUT OF A BOX??? Let me apologize for my non cooking friends
Recipe. Cut up sausage and throw it in a large pot on medium heat. When it's almost done add the Trinity,bell pepper, onion, celery as well as garlic, salt, pepper. Let that cook down. Once the veggies are cooked then add washed and soaked beans. Soak dry beans for many hours ahead of time. Use enough water/beer to cover the whole thing about one inch deep. Simmer for 4 hours or more on low. To cook rice, I use Chef Paul Prudhomme's recipe of baking it in a deep pan with a tight foil cover. Mix it two to one, water over beans, seal it and put in the oven for 40 minutes. It's FIYA!

My wife has been using Treebeard's recipe for 20+ years. IMO, it's the best.

I'll throw in here...
boil up yer beans. Nothing in them till they start to get soft. That takes a hour and a half or so...
When they start to soften up add the trinity. Onions celery peppers and even carrots if you like. For peppers, I use red bells or poblanos, jalapenos, in what ever combination you like. I don't really like green bells, but if you do, use 'em! Of course lots of garlic goes in too.
You can add the cut up sausage now or wait till the beans are done. I wait till the beans are done to add sausage. When everything gets cooked and is done, then you can add the tonys or whatever cajun spice you like. Wait till the beans are soft before you add any salt! That goes for any beans... brown rice too. If you add salt at the beginning the beans will take forever to soften, if at all... Add rice, hot sauce and enjoy!

I now do it this way. It is counterintuitive but the results are superior.

Make red bean's seasoned to your likeing, then make rice, then mix togather in the same bowl, get a spoon and enjoy !!! LOL Corn bread goe's good with it also. Sorry I couldn't resist. LOL
