Soak fillets in a mixture of Tabasco, yellow mustard, and a bit of water to thin. Dip in flour. Dip in egg wash seasoned with Tabasco. Dip in mixture of flour and cornmeal seasoned with salt, pepper, and a bit of cayenne. Fry until golden brown.
