I think that's going to be a little tough since the back of those kayaks isn't exactly flat. The good news is you have great access with the large rear hatch. I would have a backing plate inside the kayak and then a plate on top leveled using spacers of some sort. You'll have to place the anchor offset of center to keep using the rudder.

I've been down the power pole, stake out stick road and both are a pain to me. Power pole gets in the way of my casts and a stake out stick just gets in the way all the time even when it's stored on the kayak. I simply use a 5 lb dumbbell from Walmart tied to a short rope that I hook onto my anchor trolley. Just ease the dumbbell in the water when I was to stop. It's quiet and there's no stick grinding into the mud which can spook fish and that set up is under 10 bucks.
