Looking for recommendations for a guide for bonefish/tarpon fly fishing on Grand Cayman. Would prefer to be on a poling skiff but would be cool with wading.

I would check out the danblanton or microskiff websites. I have read some reports on Grand Cayman on those sites.

Used to live there,can't give any help on guides but will tell you if you can get out to the Head of Barkers, a lot of good wade fishing there. Or easier to get to is Frank Sound.
The dykes/canals into the Head of Barkers are like a maze so keep a good track, plus those canals hold lots of small Tarpon and the occasional Snook.
