Cottontail Recipes
We've got more cottontail rabbits out here at the ranch than I know what to do with... I'm about to take the .22LR and shoot one...
Anyone got some good recipes for em'?

Step 1: Choot 'em
Step 2: Clean' em
Step 2: Brine 'em Step 3: Tie 'em (like a chicken so they don't fall apart)
Step 4: Crock Pot 'em!
Step 5: Eat 'em!
Brine: Put it in a bowl, cover with apple juice. Add 6-8 tablespoons of salt, and BBQ sauce for color. Stir. Soak for 24 hrs.
Crock Pot recipe: DO NOT DUMP IN THE BRINE MIX!! Throw all of this in with the rabbit on low for 12hrs.
Au jus gravy packet (low Sodium if avail)
Stick of unsalted butter
Cracked black pepper to taste
Ranch seasoning packet (low sodium if avail)
1/4 cup water

I had a friend (may he RIP ) who used to brine a rabbit overnight, rub it with an unknown mix of pepper/spices, and then would cook it on a medium size Old Smokey with indirect heat (coals on one side-rabbit on the other) on the balcony of his apartment. He had made a stand out of a heavy gauge wire and would stand the rabbit up like beer can chicken with kitchen twine holding it together (legs tucked like a chicken) with a clump of fresh herbs inside the cavity. I never knew for sure how long he cooked it (but I suspect it was at least 3 hours), but it was not dry and it tasted awesome. Miss him and his game chefery.

Don't use 2x4's to grill it like my buddies and I did as 12 year olds.

way back around 1970 the state had a problem and was paying a bounty on those guys. My dad and friends cleaned out around 200+ from his friends ranch -- We ate freaking rabbit for almost 2 years. You name it, fried, grilled, with dumplings (the best way ) whatever-- I have never eaten another one, nor shot one and had to clean it-- I can still smell it to this day.
