I like to heat up one can each of Wolf Brand Chili (no beans), Ranch Style Beans with onions, and Rotel Original over the fire. I open the lid on each can 3/4 of the way with a can opener and put them right next to the fire until hot. Combine all three cans in whatever type of container you have and mix in some tortilla chips. If you have a skillet, fry an egg or two to put on top. If not, it's good as is. It's based off a recipe on the back of a can of Wolf Brand. I just simplified it a little. Sort of a gringo-ized version of chilaquiles. Best 5 minute camp meal ever!

No one said sausage, cheese, and jalapeno kolaches. Never had a problem eating them for a weekend in a pinch.

I also like to make turkey sandwiches on bolilo rolls or mini baguettes with swiss cheese, sweet pickle, and mayo- a la Antones. Wrap up a gallon bag of those and you and your buddies are good for a couple days.

Of course, the real deal is ribeyes rubbed with garlic powder, salt and a little pepper, marinated in worchestershire, thrown in a tight Ziploc. Big can of Bush's beans, and some spuds wrapped in foil.

-don't forget the salt and butter.

Now that is an idea that is worthy. Mayby we can get BB involved. Knowing his affinity for picnic tables he is bound to have a few good recipies that he may be willing to contribute.

Here is my contribution:

Pico:
1 jar or can of pickled jalapenos chopped- add pickle juice to pico
12 chopped seranos
2 chopped beefsteak tomatoes
1 chopped white onion
2 chopped red onions
parsley chopped
cilantro chopped
4 oz apple juice

Mix ingredients and chill overnight

Enjoy

I've made "bread on a stick" kolaches for campouts.
Warm up some sausage, I'll put it in foil and set by the fire. Take a can of biscuits, find a stick about the same diameter as the sausage. Wrap the biscuit around the stick and hold over coals or the fire while slowly turning, or I'll stick it in the ground by the fire and turn it every few minutes. If it cooked right it will easily pull off the stick when done. Stick the warmed sausage in the biscuit and you've got a camp kolache. Use jalapeno and cheese sausage and your in business.

A few white bass filets sprinkled with a little Tony Chacheres on top of chili lime ramon noodles is pretty tastey! Easy to cook and goes a long ways.

Pre cook chicken breast, beef (ground or strips), and bacon and put into seperate ziplock bags. Pre cook any type and flavor or rice and maybe some noodles and put intoseperate bags also, also sauteed mushrooms and oniotns and garlic. Add a few of your favorite spices to any combination of your premade foods and heat up. Add noodles with mushrooms and onions and garlic to chicken breast with chopped up bacon or any other concoction you come up with. Frozen vegetables in the ice chest keep things cold and can be added also.

When it's just me without a stove. Nothing to cook or refrigerate. It's P&J sandwiches, carrots, zucchini, apples. Fish tacos with sardines. Cliff bars, Trail mix with dried fruits. Now when my lady goes it's with the stove and ice chest and gets much more involved. Why can't they (women) learn to eat out of cans (sardines)?lol

Mountain house meals. Chicken and rice or something of that nature. I also pack a few packages of foil wrapped chicken breast you can buy at the store. I'll add that to the mountain house to boost the meat content. Don't forget the crumb desert they offer as well, it's a nice addition to treat yourself and it actually tastes good. I always bring foil and asparagus and potatoes. They cook up real nice on some coals. Go well when you catch some fresh fish. I also bring a small backpacking stove makes the MH meals a snap. MSR, Optimus, or my personal favorite Jetboil top the list. Super small and fuel canisters last quite a few boils

Easy camping food.

What I usually do since I like to backpack a bit is I take my dinners usually quinoa, rices, beans (especially 12 bean) some steak or ground with all the veggies. I dehydrate them seal them up with those handy oxygen absorbers. They weigh almost nothing. Package them up in nice Mylar bags. When I am out I use my jetboil flash ( which takes less than 2 mins to bring to boil and also has a pan attachment) rehydrate my food and add whatever my days catch is. I have used my jetboil to boil up sausage and chicken if I can not have a fire going and just don't feel like dehydrated food as well. (Mostly at beach when wind is to high to use pan and I don't feel like eating sand. The jetboil has been very reliable.

When weight and space are an issue this is te best way for me. Not to mention the small fuel cans for jetboil usually last me about 1 weeks worth of breakfast and dinner cooking. Also have used to heat water up for my hot water bottles on thos really cold nights.

I will try to take photos this next trip. Taking it Yaking for the first time.

Thought I'd offer this up for consideration.

I've found that Libby's makes 6oz. mylar packaged meats that are really pretty good.

One is seasoned for Italian type meals. Mix a small can of spagetti sauce, some pasta and you've got a one pot meal.

The other is Mexican seasoned. Heat it up, spread some Frito's bean dip, shreaded cheese and picante sauce on tortillos. Makes 3 really meaty taco's and hits the spot.

I've also mixed up a can of corned beef, canned corn, diced potatoes for another one pot meal. I add some jalapeno's to spice it up a bit as well.

If your trip allows you to bring a cooler along here's something I've taken a liking to:
  • Pick up some frozen individually wrapped pre-cooked breakfast burritos like these: http://www.bobevans.com/Grocery/126/Owe ... Taco-24-ct" onclick="window.open(this.href);return false;
  • Remove from plastic wrap and wrap in foil.
  • Load a few ziplock baggies up with the foil-wrapped burritos and throw them in the cooler.
  • Wake up in the morning and throw those suckers over a warm fire or grill for about 2 minutes and enjoy.
I think the key to making anything easy while camping is to do a bit of prepping beforehand. And of course you can always go with the freeze-dried meals. mmm I'm getting a bit hungry now! :D

My favorite camping food is Gypsy Gumbo. You heat up one large can of Campbell's Vegetable Soup and add one bag of shredded cheese. When the cheese is melted, pour it over Fritos and enjoy! It's super easy to make and yummy. Plus, it contains a ton of veggies so it is healthy too.
