Bake some Tater Tots in the oven per instructions
While that cooks, in a non-stick skillet over medium heat, saute the following:
- 2 pieces of bacond chopped up
- 1/4 cup chopped onions
- 1/4 cup chopped Poblano pepper
- 4-5 mushrooms chopped
- salt and pepper to taste
When onions have started to clear and bacon is cooked add:
- 1 handfull of baby spinach or chopped chard
- 1 clove garlic, minced
- 2 roasted and seeded jalapenos, finely chopped (optional)
Saute until the greens are evenly incorporated.
Remove the Tots from the oven & add them to the skillet and lightly fold everything together. Reduce the heat to simmer, sprinkle some shredded cheese over everything and cover for about a minute.
Add two or three eggs, sprinkle the eggs with Cajun seasoning and cover again. Cook for 4-6 minutes or to where the eggs are to your liking (mine have slightly running yokes).
