Carnival Scallops

This is a fun one to make and it looks good when finished. I ususally do it with out a recipe but I am pretty sure these amounts are close.

Carnival Scallops

Large Scallops................... 6-8 each
Kalamata Olives................ ¼ cup
Sun Dried Tomatoes.......... ¼ cup
Dried Cranberries.............. ¼ cup
Flour................................. 1 cup
Basil, Fresh....................... 4 leaves
Olive oil............................ 2 Tbl
White Wine....................... Splash
Seafood Stock.................. ½ cup
Salt................................... Taste
Pepper.............................. Taste
Sough Dough Loaf.............. 1 ea
Olive Oil............................ 2 Tbl

1. Make sure sun dried tomatoes are soft by soaking in water
2. Rough chop tomatoes and mix with olives and cranberries
3. The bread loaf should look like a hamburger bun
4. Slice the bread vertically in to strips
5. Brush strips with olive oil and toast, once crisp put to the side
6. Dust scallops with flour by rolling them around in the flour
7. Heat Olive oil in a pan until hot
8. Add scallops and sear on all sides for about 3-4 minutes
9. Turn heat down a little
10. Add sun dried tomatoes, olives, and cranberries to the scallops
11. Add salt and pepper to taste
12. Add white wine and reduce by half
13. Add seafood stock cook until sauce is thick, do not cook to long
14. Slice basil in to strips and add to the pan
15. Stack 3-4 toasted pieces of bread on the center of a plate
16. With a spoon place 3- 4 cooked scallops on the bread
17. Spoon sauce over the scallops and serve
