Kings Inn, Rivera TX

I got a chance to eat here while doing some work on the Kenedy Ranch a couple of weeks ago, and they had this tartar sauce that was better than crack. I was curious if anyone on here might have a clue to how they make it. It wasn't creamy stuff like you get in the store it was pretty tangy, with a lot of horseradish and Worcestershire sauce or anchovy paste in it. This stuff was so good we were just putting it on crackers and eating it and I never have liked tartar sauce in my life. Anyone out there got any ideas?

Google up recipes.com and type in tartar sauce recipes and they'll have a ton of them. Check the ingredients in each one until you find one that looks like the one you want.

Google "Kings Inn Tarter Sauce Recipie, Texas Highways magazine. Very close to the real deal....cC

The TPWD recipie is close but the original has chilipitins in it I know that much. Old lady that owns the place claims it's a secret process split amongst several employees. Only thing is there have been so many teenagers go thru there most the locals know how too make it.

2 George's and Railroad Station in corpus are pretty close to it as well.
Now I'm craving shrimp and I'm in Rosswell, NMR. Thx

If you're in Kingsville, Brink's seafood (small mobile kitchen) has similar tartar sauce but nothing compares to the Kings Inn tartar

Man-o-Man!...They have some great eats coming outta that little trailer!!! The Boudin is incredible. :D

Two friends of mine went fishing and decided to go to Kings Inn to eat. Line was too long of a wait. Decided to try another restaurant near that was located on the water with a small pier out back. Killer food with a rustic building. Couple home made pies to drool over located on a nearby table. Just gives another choice, probable the only one of two places to sit down and eat without going to Kingsville town.

Sounds like Baffin Bay Cafe Tom. It's pretty good too. I'll still take Brinks over them though.

I will be dining at the King's Inn this Friday. I'll try to smuggle some out and put it through the laser spectrometer.......see exactly what's in it.

In the November issue of Texas Highways, writer Helen Bryant takes readers to the Famous! Kings Inn in Riviera, whose recipe for tartar-sauce remains a closely guarded secret. The first one makes enough for Coxey’s army; adapt and adjust as you (and your hungry crowd) wish.

1 quart mayonnaise
1 quart Miracle Whip
10 eggs, hard-boiled, peeled
saltine crackers (3 tubes or 3/4 box)
5 stalks celery
jalapeño pepper, seeded (to taste)
2 1/2 ounces Worcestershire sauce
salt (to taste)
2 small bell peppers, seeded
1 (4 ounce) jar pimientos
1 (2 ounce) can anchovy fillets
1 large onion
fresh garlic (to taste)

Finely chop celery, jalapeños, bell peppers, anchovies, garlic, and onion. Add salt and Worcestershire sauce. Mash the hard-boiled eggs together with the crackers, then mix all ingredients together with the mayonnaise and Miracle Whip.

Here’s a recipe that has been adapted for home use. Note that this one doesn’t contain anchovies or onion
1.5 cups salad dressing (Miracle Whip)
.5 cup mayonnaise
Jalapeño peppers to taste
4 boiled eggs
10 saltine crackers, crushed
2 ounces bell pepper, shredded
2 stalks celery, shredded
2 ounces garlic, minced
1 tablespoon Worcestershire sauce
Combine ingredients and serve!

IN SEPARATE BOWL, ADD ALL REMAINING INGREDIENTS EXCEPT CRACKERS.
POUR INGREDIENTS FROM BLENDER INTO BOWL AND ADD CRUSHED CRACKERS AND MIX.

Closest you can find in the grocery store is Chile Piquin, dried or bottled.
It is a tiny oval pepper, the ones at the store are about 1/4" to 3/8" long.
They also grow wild in South Texas and Mexico, and wild versions are commonly called 'Chile del monte'
~~~ rough translation 'wild chile', the wild version is a bit smaller. And known to be fairly "warm".

I grew up in Kingsville and have several great memories of eating at Kings Inn. For those that haven't eaten there you simply most of you want to understand. If to do don't pass up the frogs legs.
