We buy ours at HEB - nice big filets at decent price.
On cookie sheet place salmon skin side down and coat with olive oil and spices of choice - we use Lawry's garlic salt with parsley. Add to the sheet three roma tomatoes cut in half - coat with same stuff. Cook on highest rack in oven under broiler on High setting for 10 minutes (if the filet is very thick you might have to go 12-13 minutes - cook until meat flakes with fork).
It is delicious.

Sounds good I was thinking about cutting some garlic and slicing a few tomatoes and foil wrapping the salmon.

This was my outcome of the above suggested. I stuffed the salmon fillets with crab snow crab meat
