Avocado Eggs

Avocado Eggs:

A good breakfast/snack.

Ingredients:

Whole avocado
Eggs
Cayenne pepper (or any spice of your choice)
Cheese (optional)

Remove the pit from an avocado. Scoop out a little more avocado to increase the size of the pit's crater. Crack an egg into the crater. Sprinkle with Cayenne pepper (cheese too if you desire). Bake in the oven at 180 degrees until egg is cooked to the level you like.

I thought some folks might enjoy it, easy, fast, and good, and I think it would make a fast, filling, good meal on a river trip, just have to adapt a little bit.

Temperature is 425 degrees Fahrenheit NOT 120 degrees which is actually the Celsius :horse: :horse: :lol:

180°C is equal to about 350°F

120°C is equal to about 250°F

BTW I made this a few weekends ago while my sister in law made her world class Chilaquiles at a family brunch. I used Valentina's hot sauce & Queso Fresco on the avocado eggs. The avocado eggs literally disappeared in 5 minutes. Very good recipe.
