Did this with a black bass that swallowed a hook and ripped his gills. I practice catch and cook, not catch and release :lol: this was also excellent w black drum and can't wait to try it on some snapper!

Moisten filet w water and rub in garlic salt - do this with all fillets. The put sirachi - about quarter size dab on filet and rub it on. More if you like some kick. Do this on both sides. Heat some canola oil to almost smoking and throw on filets. Turn when edges become opaque. Serve on bed of dirty rice. Can also use butter for a slightly less healthy version. 8)

My kids call it "rooster sauce" and we go through it by the gallon. Cant wait to try this!
