Redfish Recipe

Just thawed out 4 huge Redfish fillets. I need a recipe besides fried. Looking for a "healthier" way took cook. Pan seared, broiled, baked... Ive looked on some cooking sites but I figured I would ask here where people do the catching and the cooking. Any ideas would be great. Thanks.

Season with salt, pepper, garlic powder
olive oil on hot skillet

Sear till turns white to the middle then flip.

When whole fillet turns white through its done....longer for dryer meat.

Light lemon juice and done.

Leave skin and scales on...make several slits across meat.

Season with taco seasoning..

Cook OUTSIDE scale side down first.

Cook till meat is white half way through.
Pull from grill then lightly oil grill...now meat side down till done.

Corn tortillas, avocado and some diced tomatoes & onion.

Leave the skin & scales on your red fillets, sprinkle with lemon-pepper, cajun spice or anything you else you might want.
Slice real butter chunks or use the liquid butter "spread" & cover half to a 1/3 of the meat area. Or can substitude with Italian dressing.
Slice tomatoes & lay on top (I prefer garden fresh, has better acid taste)
Slice or diced oinions into lg peices (1015's are the best)
Then leafs of sweet basil (if you can find them) or green bell pepper. This is to give it some color maily. Looks are important on this.
Then let all this set a few hrs in the frig.
As your getting your fire ready take them out & let them set at room tempature 30min prior to placing on grill (very important, this is meat absorbtion time from the tomatoes)
Place a couple of mesquite logs on your fire & tour ready!
I like to wrap my grill with foil 1st & poke a few holes in it, the butter melting will prevent them from sticking. use a spatula to remove them after 15min of cooking time (depending on how hot the fire is or how thick the fillets are) test with a fork. Also sqeeze some fresh lime juice on them halfway into the cooking process.

ENJOY!!! The best way there is to eat redfish!!!
