Pan seared flounder

This was very good with flounder. Salt and pepper flounder to taste. Use smaller fillets as thicker ones don't cook as well. Use a non stick skillet for best results. Dredge fillets in flour and cook medium high in real butter. 3 mins on each side should be golden and slightly crisp on edges. Remove fillets, turn off burner and add 1 jar of capers with juice ( less capers if wanted,but 1 used whole jar)and 3 tbsp of lemon juice to the butter and whisk for 30 seconds. Pour sauce over fillets and serve immediately. I sauteed asparagus in butter and season salt and made baked baby red potatoes for sides. Was delicious. Optional is add a little cayenne for spicier taste to the fillets.
