Definitely some of those in my future, potato salad or not :D

Did you do any smoke or just straight charcoal?

Slow cooked for 2.25 hours

Not directly on the coals! I also did a mix of 20% sausage mixed with lean ground beef. I added a sliced piece of Jalapeno and a cube of pepper jack inside the meatball. I added another cube of pepper jack before wrapping in bacon.


Don't use thick cut bacon!!! It also takes 2 packages to wrap as many as I made. I found this out the hard way.

any thing that slow cooks I like ..that way I can drink till its done :lol: One thing I learned is you don't need toothpicks.. I did poppers last night first time without toothpicks

I made them and they were really good. On that same web site there is a recipe for Margarita Ribs. Check it out. Man did they turn out good too.

Be sure to get the biggest Onions you can find. Break them down so there is one or two layers left in the outer onion.
