Redfish on the half shell with a twist !
Redfish on the shells sprinkle with some ( head country seasoning ). Add few slices of real butter then lightly baste with sweet baby rays honey barbque sauce and grill med heat for 15-25 minutes depending on thickness of the fillets . I also wrap half of a handful of wet hickory wood chips in alum foil then poke few holes in pouch and place under the grills on the lava rocks /etc. After done I garnish with some finely cut rosemary or fennel .

Potatoes I cut in chunks then lay on 2 pieces of alum foil and add butter & sprinkle garlic powder / head country seasoning also little Italian dressing / tad bit of water wrap in foil place in corner of grill . Fish ready potatoes also ready
