Here are some simple basting sauces for your fish! Just decide what flavor you want and how you want to cook it.
Asian
1/4 cup chopped cilantro
2 tablespoons minced fresh ginger
1 garlic clove, minced
1 teaspoon Asian sesame oil
1 tablespoon canola oil, plus more for rubbing
Mediterranean
1/4 cup finely chopped parsley
2 tablespoons salted capers, rinsed and finely chopped
2 garlic cloves, minced
1/2 teaspoon crushed red pepper
1 tablespoon canola oil, plus more for rubbing
Caribbean
2 tablespoons minced fresh ginger
1 garlic clove, minced
1 serrano chile, seeded and minced
1 teaspoon chopped thyme
1/8 teaspoon ground allspice
1 tablespoon canola oil, plus more for rubbing

So do I dip the fish in the sauce before or after I deep fry it? All kidding aside I have some blackfin tuna that I want to try the Asian sauce with.

I guess you could fry with it but these sauces are meant for baking, broiling or grilling. I would think the tuna steak grilled would be excellent with the Asian flavor.
