MAN, I am really impressed!
This was my first time preparing and eating KINGFISH.
My co-workers and I had it over a bed of white rice with mixed vegtables mixed in and it was very tasty.
I throughly enjoyed it. If I was'nt watching my weight I would devour at least three helpings of the stuff in one sitting.
The texture when warmed up and served is that of a well cooked pork-chop. It does not smell fishy like some fish dishes smell.
The taste also does not have the fishy over-baring taste that I do not like when eating fish. VERY GOOD recipe and I will be doing this
again for sure.
*I will prepare a dish for my wife and mother-in law this evening complete with yuka, rice, and plantain and see how she favors it. OOOOOh and my wife is
pickey; so if she likes it, its gotta be good.

This fed 12 adult servings with one 42 inch King using this recipe.
I only had to cook once to produce the Escabeche/King Fish recipe. I think that is pretty good.

The high mercury levels help the curing process especially well.

Man the only reason I can think of to pickle a fish is if you just don't like the taste of fish!
