Did this a couple days ago and it turned out awesome.
What you'll need:
Beef tenderloin roast, trimmed and silverskin removed
3 8" sprigs of fresh rosemary
5 or 6 cloves of garlic
Cracked black peppercorns
8 or so slices of bacon
How to prep:
Take a knife and stab holes into the roast, stuff garlic cloves into these new orifaces. Dust entire outside of roast with black pepper. Lay out bacon in overlapping (or make a bacon weave if you really love bacon) fashion. Place 1 rosemary sprig in middle of bacon perpendicular to bacon slices. Place roast on top of rosemary in middle of bacon. Add remaining two sprigs of rosemary on opposite sides of top of roast. Wrap bacon around roast. This whole process can be done a day in advance.
Set oven to 400*F. Place roast in roasting pan and cook until internal temperature of 125*F. Remove from oven and let sit covered in aluminum foil for 10-15 mins. Slice and serve.
