Amberjack made simple

I like to pretend that I'm a celebrity chef in the kitchen, but in reality I may make it at McDonalds flipping burgers. Anyway here is a recipe that I made up and actually came out good.

1 lb Amberjack (cut to fit on Kings Hawaiian bread)
6 T vegetable oil
1 C Italian style breadcrumbs
1/2 C grated Parmesan cheese
1/2 red onion - chopped
1 jalapeno - chopped
1/2 red bell pepper - chopped
2 large cloves garlic - finely chopped
1 t Tony Chachere seasoning
2 T olive oil
1/2 C heavy whipping cream
3 T chicken broth*
Package of Kings Hawaiian (rolls or buns)

Heat 2 T olive oil in skillet over med/high heat. Add the onion, jalapeno, pepper, garlic, and Tony's. Saute until the onions are tender. Meanwhile mix the bread crumbs and cheese in a bowl. Dredge AJ in oil and then breadcrumb mixture, set aside. Heat 6 T veg oil in to med high heat. When the onions are tender stir in the heavy whipping cream and chicken broth, bring to a boil, then reduce heat, stirring occasionally until thickened, salt to taste. Fry the AJ in the oil for 2 - 3 minutes per side depending on thickness. Take caution not to overcook the AJ. Toast bread.

To serve: place AJ on KH and top with sauce. This makes killer sliders.

*I make my own broth with fried turkey carcass that is heavily seasoned and then freeze in ice cube trays. I used 3 of those cubes in this recipe.

Never had amberjack before. Recipe sounds good though! Thanks for sharing!
