Ok! The trout is pretty straight forward. Season it any way you like then add crushed pecans. If you wanted to you could sub the trout with the redfish, which is preferred, was just trying something different
Redfish was seasoned then fried, nothing fancy.
The flounder is seasoned with cajun seasoning then wrapped around stove top dressing with shrimp and secured with a toothpick=Flounder Pinwheels

You can also add crawfish etouffee to the pecan crusted trout=AMAZING!!
and sweet potatoes as the side, goes really well with the trout
