Breakfast Tostadas

I eat "rich" on weekends, especially Sundays, but because I do my main grocery run on Sunday afternoons, I am usually working with leftovers. BTW, by "rich" I don't mean caviar, salmon and mimosas :lol:

I had leftover chilli, unused corn tortillas (from the King Ranch Chicken I made for Christmas) and an open can of Goya refried beans. The result:

2 corn tortillas, fried flat in 1/4" of oil, to light brown and almost crisp (or buy the ones already cooked)
2 small scoops refried beans, heated in the microwave
2 small scoops of chilli, heated in the microwave
2 fried eggs, slightly undercooked from how you like them
grated cheese

Stack in that order and place on the middle rack under a hot broiler until they are to your liking (I didn't go as long under the broiler because I had over cooked my tostadas) but until the cheese starts to bubble or the tostadas are getting too brown for your tastes; whichever comes first.

They were really good, tho in hindsight, I'd have had pico de gallo to sprinkle on top after broiling

Seems like a odd mixture of ingredients but also looks great :mrgreen:
I know what you mean by "rich" foods lol
