Not hard to make, never fails to get rave reviews.
3 Cups Grated carrots
1 Tsp Vanilla
4 Eggs
1 Cup Chopped pecans
2 Cups Sugar
1.5 Cup Vegetable oil
2 Tsp Baking soda
1/2 Tsp Salt
2 Cup Flour
1 Tsp Cinnamon
Preheat oven to 350. Combine carrots, eggs, sugar and oil.
Beat until well mixed. Add all remaining ingredients. Beat well.
Pour into 3 greased and floured 9” round cake pans.
Bake 40-45 minutes. Remove cake from pans after 10 min.
Cool layers completely. Frost.
Frosting
1 8 oz Cream cheese
1 Box Powdered sugar
1/2 Cup Golden raisins
1/2 Cup Chopped pecans
1 Stick Butter melted
Beat cream cheese until fluffy. Add butter, beat well.
Gradually beat in powdered sugar. Mix in pecans and raisins.
Easiest to frost when cake and icing are room temp.
Frost between cake layers and all over.
