Here is my recipe for Mexican Ceviche. Im form Mexico and Lived in Mazatlan (Pacific Coast ) for many years. My father is from Acapulco so this is the real deal.
Mackerel is one of the best fish for ceviche. I have done ceviche with red fish and its also good. The important thing is that the meat is white...thats it.
Cut the fish in small squares.... squeez enough line to cover all the fish in a bowl and let it "cook" in the lime juice for two hours. Dice soem tomatoes, celantro, onion, olives and serrano pepper and mixi it with the fish after its cooked in the lime juice. Add salt and black pepper and LISTO!!

Olives in ceviche? Sounds odd but good at the same time. Maybe some kind of Vera Cruz connection going on there. I think I like it.
