Microwave catfish for lunch

Bought 3 catfish fillets from HEB for $5.75 and brought them to work for lunch.

Laid them on a heavy paper plate, spread a liberal portion of Tony's Creole seasoning on them, then doused them with Vidalia Onion salad dressing/marinade (bought at Sams - Italian or other salad dressings will work). Covered plate with another paper plate and cooked in microwave on high for 3 minutes.

Delicious, cheap, healthy and quick!

Is fish safe to put in a microwave? I've always heard chicken isn't and fish seems somewhat sketchy.

Hmmm...never heard that question before. We've been cooking chicken and fish in the microwave for years with no ill effect.

My theory is that if you get it to the right temp - about 160 deg for chicken, etc. - what difference does it make how you cook it?

Ok, turns out you can do it (with the chicken), just need to be careful to make sure internal temperatures are even. So I guess a thinner filet would be be even easier to maintain that.

On another note, recipe is right up my alley being a college student that doesn't always have to cook an entire meal, or as a quick lunch at my internship. I'll have to try it out, ever use any other marinades? Kroger makes some good 30-minute marinades that I really enjoy.

Another way we have done it is by seasoning the filets with creole seasoning (or any seasoning you like), putting a little pat of butter on each filet, then squirting lemon juice on them. I've done it with soy sauce as well, but that stinks up the kitchen at work and everyone yells at me! :shock:

Well other than the smell, how did the soy sauce turn out?

Tried a new way last week and it turned out great.

Poured some liquid from jar of olives on filet - then sprinkled with cajun seasoning - then put some HEB brand pico de gallo on it. Cooked 3 minutes. Best yet!

It's fun experimenting with whatever I can find in our kitchen at work. :D
