What to do with Leftover Chili

'Tis the season for chili and I have been making a pot once every week or two. Leftover chili is great in a bowl with cheese, onions and jalapenos - just like always - but I've been looking for other ways to use the leftovers.

- Over fried eggs; my favorite right now. Heat some chili, fry a couple of eggs to over medium or over easy (if you like it runny), put the eggs in a bowl and sprinkle with a little grated cheddar cheese and pour 1 to 1-1/2 cups of heated chili over the eggs. Now cut or mash the eggs up and let the yokes mix with the chili and cheese and enjoy.

- Also (and I know this is nothing new) I've been pouring hot chili over my next-door neighbor's home-made tamales. Wow! way better than any restaurant.

What do you do with leftover chili?

I put it on Tostitos chips, then shredded mexican cheese, jalapenos, green olives and it makes a dang good nacho plate.

Love to make my nachos and watch the NFL games.

To me 2nd day Chili is always better, not original, but I still love it over fries with a heaping of cheese, but I am going to try that egg deal!

I like to bake a big potato then top it with leftover chili and some cheese.

He's not kidding...the taters he cooked on the campfire last weekend were damn near as big as my noggin. :lol:

Good one. With how much I love chopped beef on a baked potato, I don't see how this couldn't be just as good. Will likely include cheese onions and jalapenos on mine.

I just tried something new to me; Texas Spaghetti.

Warm up some leftover chili while making a batch of spaghetti. After draining the spaghetti, put it back in the warm pot, stir in a tablespoon of butter and the chili. Add some grated cheddar cheese and watch out taste buds

White Trash Size Royal:
Pan-fried burger patty on Texas toast with caramelized onions, jalapenos and shredded cheddar cheese, open faced with chilli all over it. Home fried taters on the side.

Also,
Tortilla chips with COLD chilli, Parmesan cheese, black olives, green onions chopped and jalapenos. Served nacho style but all cold. Sounds weird but it's an old recipe from a long-gone Austin restaurant and it's bad-azzzz.

Enchiladas. Heat some corn tortillas in a little oil til they are soft enough to roll. Put some grated cheese and chopped onion in a fat line across the tortilla and roll up. Put it in a ovenproof dish, 8x8 or 8x12. Continue until dish is full. Pour chilli over all. Put more grated cheese and chopped onion on top and put in a 350 oven till everything bubbles. Have a beer ready for when you burn your mouth.
