1 1/2 lbs skinless boneless trout fillets
Mayo
Jalapeño stuffed olives chopped handful
Shallots or red onion chopped fine handful or less
Tony Chachere's

Put trout in one layer in microwaveable covered dish
Lightly sprinkle with Tony's
Microwave about 4 to 4 1/2 min.
Mash fish with fork well
Let cool.
Add other ingredients with mayo to your taste
Serve on crackers
