Glaze for grilled fish

Ok, I'm a big fan of rum and an even bigger fan of eating, so this one worked well for me. We used it on tuna steaks that we grilled and thought it did well to enhance the fish.

2 oz Meyer's Rum
1/2 stick of butter (real butter)
1/4 cup brown sugar

Set heat to simmer; melt down butter in a sautee pan; add rum (this will clear out your sinuses as soon as the alcohol begins to evaporate), stir in brown sugar until you get a runny syrup consistency. If it's too runny you can always add a little extra brown sugar to thicken it up (or just drink more rum until you don't care). Turn heat to low just to keep it from hardening up on you and brush on your fish while it's on the grill. It will coat your fish in a great tasting sweet glaze. Might work well on chicken also, I havn't tried that yet.
