Stuffed Pork Steak

1 16 oz. Pork Steak, preferably feral hog.
1 oz. Pesto
2 oz. Porchini Mushrooms
10 Spinach Leaves
2 tsp. Parmesan Cheese
.25 c. Dr. Pepper
.25 c Apple Butter
8 – 9 Roasted Potatoes
2 Roma Tomatoes
1 tsp. Basil / Oregano Mix
1 tsp. Salt / Black Pepper



1. Pound pork steak until size has doubled, careful not to tear the meat.
2. Mix Dr. Pepper and apple butter and cover steak, season with salt and pepper, marinate for at least 4 hours
3. Spread Pesto on to pork steak, sprinkle Parmesan cheese, spinach, and mushrooms on to steak. One side only.
4. Roll the steak into a tube shape, trapping all the goodies inside.
5. Place steak on to a hot sauté pan and sear.
6. Place into a 350 degree oven for 10 minutes or until done.
7. Remove steak and drain the juices through a mesh strainer (a pasta basket will do) into a sauté pan.
8. Reduce the juices in the sauté pan by half.
9. To serve, remove steak from pan and slice into medallions (approximately 6), careful not to tear out pesto and mushrooms.
10. Slice Roma tomatoes vertically and sprinkle basil, oregano, salt and pepper onto the juice sides of the tomatoes and grill until soft.
11. Place steak medallions across the long side of an oval plate and pour reduced juices over medallions
12. Place potatoes in the middle of the oval and place the roasted tomatoes along the opposite long end of the oval plate.
13. Garnish with parsley, Parmesan, and 2 sprigs of rosemary.
