I personally set the back strap and loins to the side for special treatment(chicken fried steak) and the rest usually goes to jerky, pan sausage, dry sausage, and wet sausage. Cut backstrap up and beat lightly with a mallet and soak in buttermilk and seasoning, usually some black pepper and tony C's, for a few hours. Then roll in flour with same seasonings plus salt and garlic powder. Make sure to shake the extra flour off before dropping in grease. Serve with gravy, mashed taters, corn, and a cold beer. Also good as a sandwich.
