Fried fish w/mushroom sundried tomato

2-4 fried fish fillets doesnt matter what kind

4 cloves of garlic chopped fine

1/4 stick of unsalted butter

1-2oz good olive oil

6 sundried tomato's chopped med

handfull of mushrooms chopped med

handful of baby spinach chopped fine

cajun seasoning to taste

salt to taste

white pepper to taste

1-1 1/2 cups of heavy cream

1/4 cup white wine

fresh parsley

juice from one lemon

Angel hair pasta enough for how many u are serving

1/2 cup of chicken stock

Zest from 1/2 lemon

Best part of it is it is simple and tasty

Heat olive oil in pan on med high heat add sundried tomato, garlic, mushrooms heat through and until garlic has alittle color on it.

sprinkle salt, pepper, & cajun seasoning in pan

Add the heavy cream to pan and turn it to high

when the cream comes to a boil add the lemon juice, then add the butter.

Add the zest next and then the spinach

Add the wine and reduce until it gets aliitle thick add the chicken stock

Add the pasta to the cream mixture and toss it

Adjust the seasonings, Put the pasta in the center of the plate, place the fish on top of the pasta and the remaining pan juices on top of the fish sprinkle with parsley and there u have it

I'm trying this recipe Thursday night. I'm going to use flounder for the main ingredient.

Really guys this recipe will work for all white meat fish, that can be fried, baked or broiled. Glad u liked it when I have time I'll post afew more.
