Trolling H20 Xpress Jerk baits
I'm wonderingin if a H20 Xpress Jerk bait would troll at a steadily pace? The one I have are set to dive 3-5 ft. Would it keep diving or roll on its side or troll through the water much like a rattle trap?

The angle of depth can only go so far before it will stop diving. As more line is let out the deeper it will go because the angle of the line in comparison to the the lure will be larger. Also the size and shape and placement of the bill will alter the depths and action also. Your crank bait should not roll or have action than what is normal. If it acts differently you can "tune" the lure by adjusting the connection eye with pliers bending it left or right or up or down. It will effect the lure by tuning it. AS for speed test the lure in the water next to your kayak as you move and look at your speed to see the optimal speed to troll it. I usually go between 1-1.5 mph which is a standard retrieve.
Line angles are kind of hard to explain...here's a picture of what I am saying...

Sometimes the line can make a difference as well...
You can also attach a a jet or dipsy diver to get the lure deeper...

Hey that's pretty cool KB.
Does the same thing relate to trolling with paddle tail jig heads?
I'd assume the graphic where they trolled a downrigger is the same concept.

Using the down rigger yeah, but just trolling it will depend on the weight of the lure and jig head, how far out your line is, and how fast you are trolling.
The slower you you reel the lower it will sink. Once a jig had or weighted lure starts to drop it will continue until you start to reel in and then it will stay at the same depth unless you reel faster or slower. Faster and it will move up in the column toward your rod tip, slower and it will drag bottom. Easy peasy.
