It's a little embarrassing (and a little off-topic) to ask this question but what do the smaller numbers; 1 1/2, 2, 5, 6, etc stand for in the second pic?

I've searched for the answer all over the place to no avail and I even have one of the Hot Spot maps...

Watching how they shove the fillets down the apparatus I wonder if it would bruise/tear some of the meat.
